This soup my beautiful wife came up with after we always ordered a similar soup from a restaurant. At first she made it just like the original recipe or what she thought it could be. Through many changes this recipe is the best one to date. In order to share this we had to measure out the ingredients because she doesn’t cook by measurements. So you can add or subtract ingredients to your desires. Once you make it you can change it to make it the way you like it. She has made it with potatoes instead of beans, Chicken broth instead of Beef. It really is just a basic recipe that can be changed in accordance to your own personal preferences. A Thanksgiving Must-Have
Our family, like every other family at Thanksgiving, is no stranger to green bean casserole, with its crunchy fried onion topping and rich, creamy filling. Truth be told, it’s one of my favorites, along with the jellied cranberry sauce.
But over the years, I have come to expect more from my green bean casserole than just opening up a few cans of beans, soup, and sprinkling on some prepared fried onions.

This hearty Casserole is made with corn, beans, and squash, and topped with cornbread biscuits. It makes a great meatless main dish or vegetarian side!
I first heard of This Casserole almost twenty years ago, back in the dining hall in my college dorm in Boulder, Colorado. This hearty casserole always made an appearance in the fall: a mélange of seemingly canned veggies with a cornbread topping.
It wasn’t always the most popular thing on the buffet table, but as a vegetarian it became my go-to, and I knew if it were made with better ingredients it could really be a home run.
This year, as I started to think about fall menu planning, the flavors from that Three Sisters Casserole kept coming to mind...

Chocolate Chip Pumpkin Bread! Made with pumpkin puree and warm fall spices, sprinkled with chocolate chips. Great for an afternoon snack with coffee!
My mom doesn’t really like pumpkin, so the only encounters that I had with it before adulthood were in the form of store-bought pumpkin pies in those crinkly aluminum tins topped with a dollop of partially frozen cool whip. Not exactly the tastiest introduction!
A Favorite Pumpkin Treat
Maybe it was fate, but I discovered my love of baking around the same time that a certain coffee chain debuted pumpkin spice to the masses. The two things inevitably collided and a late love of pumpkin baked goods was born!
