I always see someone asking about smoking or grilling salmon, So I figured I would share this easy and simple grilled salmon. 

1 Make the marinade: With the typical brine being three elements – sugar, salt and water and most being equal parts sugar and salt, I use a quarter cup salt to one third cup sugar to four cups liquid. The liquid being water, soy sauce and a dry, white wine here. Feel free to use low sodium soy sauce or adjust to less for your taste. Combine marinade or “brine” ingredients in a bowl. I love a good Hamburger and have many ways I like to make them, I got a recipe from a buddy for chipotle hamburger you have to try,

1 Roast the  poblano chiles: If including poblano chiles in your burger, you will need to roast them first. Coat the poblanos with a little oil and grill or broil them until they are blackened on all sides. Alternatively, you can take the plain, un-oiled peppers and place them directly on a gas stovetop burner, turning them as needed, until they are blackened on all sides.

Place the blackened peppers in a covered bowl for 15 minutes or so to steam. Peel off the charred skin and remove all the seeds. Slice into thick ribbons and toss with a little vegetable oil and salt and set aside.

Let’s talk about Italian beef, when you think of making Italian beef you usually think of using something like a rump roast, but today we will be using stew meat. That’s right I said stew meat, did I throw you a curve ball on that or what? I have a friend who told me he used stew meat and I decided I would have to give this a try. He used a pressure cooker but I am doing this on a Green Mountain Davey Crockett pellet grill. I think the Smokey flavor will set it off. SoI decided I would smoke the meat first 150 degrees for an hour.

  • Boneless pork chops will cook faster and are easier to serve. Just slice them up and you’re done!
  • Bone-in pork chops have more flavor ( my opinion) and won’t overcook as quickly. There’s more leeway in the cooking time, but that also means that they generally take longer to bake. 

It’s just my opinion, but I would rather save the bone-in pork chops for grilling and use boneless for this recipe.
