Tasty Snack Made With Chicken Legs

Today lets make a fun tasty snack made with chicken legs. They are a favorite around my house. The are great to serve as a snack on game day, or even make a meal out them by adding a side. They are a great way to enhance the already favorite “chicken leg” I like to trim it up and remove the skin and then season and wrap in bacon. Yes bacon the food that makes all other food taste even better. I could probably eat these things for breakfast since they have bacon.
WHAT IS LOLLIPOP CHICKEN?
Lollipop chicken is gaining popularity in the BBQ scene these days, and for good reason. Affordable chicken drumsticks are trimmed right at the bone joint and the chicken is shaped to form little handheld meat lollipops. My version includes a bacon wrap before hitting the grill for a low and slow smoke session.
The preparation of the chicken leg is really the only hard work you will do. I like to remove the skin and all the meat from the leg of the bone up to the knuckle. Making it look nice and clean for your presentation. Once I have all the skin and meat off, I then take my favorite seasoning and a little salt and black pepper and season the chicken, Then take a piece of bacon and wrap around it. The picture below shows you how they look before hitting the grill.
You could also probably cook in the oven also. I like the flavor I get from smoking them on the grill. I uses a Green mountain pellet grill. I start the temp out at 225 to 250 degrees for the first hour, Then I remove the chicken, Turn the temp up on the grill to 300 degrees and finish off till bacon is done and my chicken has an internal temp of 180 degrees. Once We are close to the temp we are shooting for I take the chicken leg and dip it in bbq sauce, you can use what ever is your favorite sauce. I have also tried spicy garlic and they were great. - Favorite dry rub
- BBQ Sauce

- Take chicken leg and and trim off meat and skin from the top knuckle to the base of the meat.
- Then season your chicken with salt and black pepper and any other of your favorite dry rub you have. Then wrap bacon around the leg and secure with toothpick or if you have another means to secure the bacon use that. Once you have all your legs trimmed seasoned and wrap you are ready for the grill or oven. When Using the grill I start off at around 225- 250 degrees for the first hour so they get a smokey flavor, Then I remove the chicken after an hour and turn the heat up to 300 degrees to finish off. Once bacon looks done check temp of your chicken to make sure you are at 180 degrees safe internal temp for poultry. hen you are there take your favorite Bbq sauce or any sauce you like and baste the legs and let cook for around %- 10 more minutes to get sauce to caramelize. Once you are happy with your chicken remove let stand for 5-10 minutes and serve
