Kale Salad with Balsamic Dressing

Tuesday, January 14, 2020 Featured

This easy kale salad comes together with dried cranberries, pine nuts, Parmesan, and a balsamic vinaigrette. No need to massage this make-ahead salad—the kale becomes tender as it rests before serving.

Some things take convincing, even when they are terribly trendy. When my friend Peg first told me about a fabulous raw kale salad, I smiled politely all the while thinking, “Yeah, right, have fun with that.”

I mean it’s hard enough to get people to eat their greens, let alone to try something raw that they would normally only eat cooked.

But when my friend Katie brought this kale salad to a dinner party, it was the one dish, among a multitude of fabulous dishes, that I kept going back to. (Oh, I’ll have seconds. Uhm, thirds. Okay I’ve stopped counting, this is good.)

This kale ...

Forget pineapple! Swedish man sends Reddit users into meltdown by adding KIWIS to his pizza

Monday, January 13, 2020 Featured

A Swedish man has sent the Reddit food community into meltdown after posting an image of a pizza he had made for him, topped with kiwis.

Stellan Johansson, an enthusiast of the furry fruit, shared a picture to Facebook of the unique take on a classic that he had made in Skottorps Pizzeria, around 95 miles north of Malmo.

Stellan, who regularly cooks with kiwi and recently stuffed it into some chicken breasts with cheese, said he brought his own fruit to the pizzeria run by Turkish staff, and they obliged in making it for him because they are used to cooking up the classic dish with various twists.

Pineapple on pizza is something that divides people everywhere and when his picture made its way to Reddit, users were quick to dismiss Stellan’s inventive kiwi dish.

Sunday, January 12, 2020 Featured

This month we’re pleased to welcome Katie Morford as part of our January Reset Challenge! Katie is a San Francisco-based cookbook author and registered dietitian who writes the blog Mom’s Kitchen Handbook. She’ll chat healthy snacks with us today!

When I was a kid, between-meal snacking was sort of frowned upon. The idea of “three square meals’ was the order of the day. And even though today’s sky-rocketing snack habits has given rise to the term “generation graze,” the negative connotation around snacking still lingers.

The truth is, between-meal snacking can have positive upsides. As a dietitian, I’m pro-snack and enjoy them myself on the daily. Snacks can provide energy, curb hunger, improve mood, regulate blood sugar, fuel the brain, and may support a healthy weight...

Planning a stop in Vancouver, BC? Here’s where to eat, drink, and stay, and what to see and do.

Vancouver is one of those rare cities where you can visit the mountains, the beach, and the urban core all in one day. Thumb through any travel guide and you’ll find many of the same suggestions. Explore Stanley Park and visit the Vancouver Aquarium. Walk across the Capilano Suspension Bridge. Hike the Grouse Grind. Relax on Kitsilano Beach. Walk the Seawall. While these are all great options (nothing beats a walk along Stanley Park’s sea wall), what many fail to mention is just how good a food city Vancouver is.

Baked Ham is a Great Way to Feed a Crowd

Monday, January 6, 2020 Food

Glazed Baked Ham is so Delicious!

Baked ham is a great way to feed a crowd during the holidays.

A glazed baked ham is so delicious and one of the easiest things to prepare for a celebration. A half-ham can feed a dozen people with leftovers. There’s very little in the way of actual cooking that needs to happen, which makes the prep a lot simpler, too.

HOW TO CHOOSE A HAM

You have a lot of different choices at the store when buying a ham:

  • Whole ham or half ham
  • Shank or butt
  • Unsliced or spiral cut
  • Bone-in or boneless
  • Fully-cooked or partially cooked or uncooked

For this recipe, I prefer an un-sliced bone-in half ham, A half a ham will comfortably feed at least a dozen people, and cooking it un-sliced means that it’s less likely to dry out...

Chicken and Dumplings in the Instant Pot

Nothing like Rich, creamy, chicken and dumplings that are made easy in the Instant Pot.

Have you ever thought about if you can make old-fashioned, chicken and dumplings in a Instant Pot or pressure cooker? The answer is a yes!

Whisk up an easy dumpling batter, add your vegetables, chicken, and broth to the pot, and you’re on your way to a rib-sticking dinner.

The Trick to Chicken and Dumplings in the Instant Pot is:

Pressure cooking chicken and dumplings can a bit of a challenge because thickened liquids either don’t come up to pressure at all, or they do, and you end up with scorching on the bottom of the pot.

To address the issue, I didn’t add flour directly to the broth in this recipe...
